The Canadian maple syrup industry produces 80 percent of the world's pure maple syrup and is the leading global producer of maple syrup and maple products. Maple syrup was discovered and used as both a sweetener and medicine by First Nations people in eastern Canada long before the arrival of European settlers. Although Canada is home to five species of maple trees, namely the sugar maple, black maple, red maple, silver maple and Manitoba maple, only sugar and black maple trees are ideal for syrup production owing to their higher sugar concentrations of 2 to 3 percent. Freezing overnight temperatures and mild daytime temperatures are required to maximize the amount of sap that can be extracted from maple trees.
